Today’s post is a little bit different, but I’ve had a few requests for this post! I’m talking about my favorite breakfast recipes. I rotate between all of these options for healthy, at-home breakfast options and they really help keep me on track!

Breakfast Recipes: Avocado Toast

Avocado Toast – The photo belongs to the avocado toast at Milwaukee’s Tre Rivali restaurant, but I love making an at-home version with:

toasted ezekiel or sprouted bread
1/2 mashed avocado
1 fried egg
sesame seeds
parmesan cheese
himalayan pink salt

Oh She Glows Apple Pie Oatmeal – Oats are so comforting for me and I always have apples on hand. You can find the original recipe here. This recipe makes a huge bowl of oatmeal so I usually halve it. It’s a quick and easy stovetop recipe and actually has almost all of the same ingredients as my next favorite.

Breakfast Recipes: Baked Oatmeal

Maple-Cinnamon Apple & Pear Baked Oatmeal – This is another Oh She Glows recipe that you can find in one of her cookbooks. My friend over at Model Eats Blog has typed it up and I reference it all the time (find it here)! I normally bake a batch and eat on it for the next 5-6 days. It’s amazing if you drizzle a little pure maple syrup on top! One of the local coffee shops here, Colectivo coffee, serves their baked oatmeal with yogurt so that’s another option!

Breakfast Recipes: Green Smoothie

Green Smoothie – I have a few recipes I love, but the one I’ve recently been making is based off a green smoothie in Kristin Cavallari’s book, Balancing In Heels. I make mine with:

1/2 avocado
1 banana
handful of spinach
1-1/4 cup unsweetened almond milk
1 tbsp chia seeds
1 tbsp honey

Breakfast Recipes: Quinoa Bowl

Quinoa Bowl – You can make this anyway you want and I usually just use the veggies I have on hand. I always try to have either scrambled or a fried egg, quinoa, and some sort of greens. In this bowl, I used scrambled eggs, quinoa, spinach, cherry tomatoes, and a slice of bacon.

Egg Whites and Oats – This is just a classic, simple breakfast with a lot of protein. I’ll scramble 3-4 egg whites and have a little bowl of oats on the side. I usually top the oats with some fresh or frozen berries, or some pure maple syrup.
